Matcha makes a great drink, hot or on ice, but because it comes as a powder, it can be used in all sorts of recipes. Try it in cakes and cookies, pancakes and waffles, or in a chia pudding like this one I made for breakfast today.
This makes for a really healthy breakfast - you get the energy boost from the matcha green tea, healthy fats and sustained energy from the coconut and chia, and crazy awesome antioxidants from the blueberries and matcha.
Matcha Green Tea Coconut Chia Pudding
1 5.4oz can Coconut Cream (I used Native Forest)
1 cup water
2 tsp matcha green tea (I used Matcha Life Organics)
2 Tbsp raw honey (I used Madhava)
3 Tbsp chia seeds (I used Mamma Chia)
1 cup blueberries
dash of Himalayan pink salt
Blend the coconut cream, water, matcha green tea, pink salt and honey in a blender. Pour into a bowl and stir in the chia seeds. Stir well to combine and refrigerate. For the next half hour, stir the mixture every 10 minutes, then let it continue to firm up in the fridge for at least an hour total or overnight. Stir before spooning into individual bowls. Top with blueberries and enjoy!
You'll typically find two grades of matcha green tea available, cooking grade and ceremonial grade. If you're going to be drinking matcha tea, the ceremonial grade has a more refined flavor. For cooking, you can use either the ceremonial or the cooking grade. No matter which grade you choose, you will want to make sure to choose organic so you're not consuming pesticides along with your antioxidants!
