When I got this bounty of yellow and orange peppers, the color so much reminded me of processed mac & cheese that I wanted to create a cheeze sauce with them.
Creamy Vegan Cheeze Sauce
1 cup raw macadamia nuts (can also use raw cashews)
1/2 cup water
1 cup nutritional yeast
1 clove garlic
1/2 tsp sea salt
1 tsp turmeric
2 orange or yellow bell peppers (or 1 of each)
1 TBSP white mellow miso
dash of chili pepper flakes
Roughly chop the bell peppers and add all ingredients to a blender. High powered blenders like a Blendtec or Vitamix will make this incredibly smooth. A regular blender will work but you may need to run it longer to get a perfectly smooth texture.
